St. Louis-style pizza is a different style of pizza popular in St. Louis, Missouri and in surrounding areas. The distinctive characteristics of a St. Louis-style pizza are a super-thin non yeast crust, the common use of Provel processed cheese which usually consist of swiss, provolone, and white cheddar.  This type of cheese is usually used in place of mozzarella cheese which is common to other styles of pizza.  A St. Louis Style pizza will be cut into squares or rectangles instead of large pie shaped slices.  Provel cheese was developed by the St. Louis firm Costa Grocery in the 1950s and is made in Wisconsin primarily for the St. Louis market.
